Chocolate Mud Whoopies

In the Amish community in Pennsylvania, the wives of hard-working farmers were said to bake these delicious goodies for their husbands – due to lack of paper trails, shall we just take their word for it?

We then have the peeps from Maine who say one of their bakeries which was established in the early 1920s, have been making whoopies since they began. Unfortunately there was a fire in the 1960s and the paper trails were also lost..

Despite it’s debatable history, the Whoopie Pie (gorgeous name), or ‘gob’ is one of those all American classic desserts that goes down in the history books alongside the American cookie and the Boston Cream pie.

Make these at your own risk.. You cannot try just one. You have to try them fresh out of the oven, with the marshmallow centre, popped in the fridge for an hour or two or crumbled through some deliciously velvety vanilla bean ice cream – um, that’s what they told me.

Makes about 10 generous sized whoopie pies

The Ingredients
125g unsalted butter
150g good chocolate (60%-70% works well)
225g muscovado sugar, or brown sugar
1 medium egg
250g plain flour
30g cocoa
1/2 tsp baking powder
100mls buttermilk
100g white marshmallows

The Method
Preheat the oven to 180 degrees Celsius (356F) and line two cookie trays with baking paper
Melt the butter and chocolate in a bowl of simmering water until just melted
In a separate bowl whisk sugar, buttermilk, egg and then add the melted chocolate mixture. Stir to combine
Sift in the flour, cocoa and baking powder. Fold until all ingredients are completely mixed
Spoon the mixture onto the lined trays, leaving 3cm or more between each whoopie (you should be able to spoon out about 20, depending on the size you want)
Bake for about 6-8 minutes. The whoopies will be soft but cooked in the centre
Allow to cool for about 5 minutes on the tray and the transfer to a cooling rack
Melt the marshmallows for about 20 seconds in the microwave with a tsp of water. The mixture should be just melted or you will have a runny, sticky gooey mess (believe me!!)
Spoon a small amount in the centre of one of the whoopies and place another on top
Allow to set slightly or eat straight away (yes please!)
