Leftovers for Breakfast

It is extremely excessive, the whole Christmas gorging and celebrating…

It’s a once a year why not (that’s what we tell ourselves anyway!) The last Christmas I went to I was so disappointed about all the leftovers that were thrown out and nobody wanted to take a doggy bag home!!

Leftovers can be chopped up and stored in the freezer - you can have ham and cheese toasties, turkey curries and a simple breakfast dish could be these! Fritters. A simple dish filled with whatever leftovers you have - potatoes, roasted veggies, cheese, ham, turkey. Throw in some fresh herbs, topped with sour cream and a touch of lime and you have a great leftovers dish.

Never throw away food!! There are so many creative and delicious ways to use leftovers - keep that in mind.



Makes about 10 fritters

Preparation time: 20 minutes

Cooking Time: 10-15 minutes

The Ingredients

200g leftover vegetables (potatoes, carrots, zucchinis) grated or finely chopped

30g onion, finely chopped

60g plain flour

2 eggs

25g cornmeal/polenta

½ tsp baking powder

1.5 tsp salt

½ tsp cracked black pepper

1.5 tsp ground cumin

1.5 tsp paprika

1 tblsp fresh herbs (dill/parsley/mint etc)

60g cheese (whatever is leftover)

The Method

Mix all your dry ingredients together (polenta, flour, baking powder, salt and spices)

Lightly whisk eggs and add to the dry ingredients

Then throw in the vegetables, cheese, chopped fresh herbs and mix to combine

In a medium heat non-stick pan, add a splash of olive oil then spoon in large tablespoons of the mixture and cook until brown and then flip to cook the other side.

Top it off with sour cream and dill, olive oil, sea salt flakes and a squeeze of lime. I added some crispy fried bacon but you can also add ham!
