The Recipe
Makes: 800g of crispy granola
Preparation: 10 minutes
Baking Time: 20-30 minutes
The initial form of Granola was actually called Granula. It was invented in 1863 by James Caleb Jackson who used graham flour, smoothed it out into a sheet, baked it until crisp and then broke it up into pieces. Granula was the first cold cereal that was invented, however it needed to be soaked before it could be consumed.
It was Dr John Harvey Kellogg in the late 181800sho actually ran with this granula idea and used oats instead... a lawsuit later, Dr K.ellogg changed the name of his cold cereal invention, an idea sparked by James Jackson, to granola.
Granola has always been pitched as a health food probably because it was invented by a doctor, however, it was not until the 1990s when food labels on packaging became mandatory and revealed that granola was not really the health food that people were made to believe it was.
Granola, it's a healthy breakfast junk food.
Who doesn't like granola? Once in a while, it's all good, everything in moderation, right?
THE INGREDIENTS
300g rolled oats
150g nuts (I used pecans cashews and almonds)
150g dried fruit (cranberries, raisins, apricots)
80g pumpkin seeds
80g molasses (if you can't find molasses, substitute for honey or maple syrup)
50g honey
20g coconut oil
2 tsp cinnamon powder
1/2 tsp ground cloves
1/4 tsp ground ginger
pinch of sea salt
THE METHOD
Heat the oven to about 170'C
Add fruit, pumpkin seeds and nuts to oats with the spices.
Mix through the oil, honey and molasses
Spread evenly and loosely in a single layer on a non stick tray
Bake for 20-30 minutes, mixing at 10 minute intervals
Take out of the oven and leave to cool completely
Store in an airtight container and enjoy ANYTIME!!!!
